- Bacon- Nice smoke flavor, well cooked, great flavor, a tad salty, can be cut into either thick or thin cuts, 1/8in. is a good thickness, when making,remember to rotate the bacon and ensure even coating of salt
- Peppered Bacon-nice flavor, nice amount of pepper coating, nice consistent cuts,
- Duck Confit-excellent flavor, well cooked, when making stovetop,ensure that heat is consistent, use an oven if necessary, ensure that meat is completely submerged in duck fat
- Pork Rillettes de Tours-nice cuts on the pork, well cooked,ensure that meat is cooked properly so as to make it easy for pulling apart,make sure to use fatty meat for rendering,ensure there is a good amount of broth left over
- Duck Prosciutto-great cure, excellent product, it's a keeper!,previously did not like duck,this is approachable and successful, be patient, drying can take some time
- Hot-Smoked Pork Loin-nice amount of smokiness,good color in the meat,great flavor,low and slow for more smoke flavor and hot smoking will add flavor but will probably be more subtle
- Jewish Corned Beef-great brine for the meat,well cured,great flavor,work on better cuts,aim for thin sliced meat, especially when making sandwiches,
- Pickled Pearl Onions-good pickling liquid, good flavors, could be used in a gimlet
- Dill Pickles-great flavor on the pickling liquid, nice flavoring agents, nice tenderness in pickles
