- Fried Fish in Pearly Meal with Remoulade Sauce-Nice portion size, nice color of breading, Nice bite to the sauce, fish is tasty, nice thick sauce.
- Chicken and Andouille Sausage Gumbo-Well cooked proteins, very flavorful, nice spiciness, nice broth flavor
- Crawfish Etouffe- Beautiful color, nice cuts of veggies, good flavor, well cooked rice, roux worked well
- Smothered Okra-Well cooked okra, great overall flavor, nice cuts on veggies.
- Bread Pudding with Whiskey Sauce-Great appearance, great custard, great idea of leaving some bread out of custard to have difference in texture, very flavorful, excellent sauce!, best made sauce overall!
- New Orleans Shrimp Bisque-Great color, slight burnt flavor, nice roux, well cooked rice, large shrimp well cooked, in the range of good thickness, needed more baby shrimp in presentation.
- Creole Jambalaya-Nice dark color, really flavorful. Work on not over cooking chicken, some was over.
- Braised Leeks with Hollandaise-Very beautiful, cooked perfectly, nice texture of hollandaise, good lemon flavor, could use a bit more sauce, most successful plate.
- Chicken Maquechoux-Screams heartiness, beautiful color, great cuts on veggies, very rich, unctuous, nice pepper kick, flesh really moist, meat soaked up flavor well.
