- 1 Combine all ingredients except sesame seeds and let stand for 1 hour.
- 2 Sprinkle with toasted sesame seeds.
Nigiri-Zushi YIELD: 24 PIECES

- 1 Make the tezu by stirring together the water and rice vinegar.
- 2 Mix wasabi powder with the warm water to make a paste; set aside to rest for 30 minutes.
- 3 Dip fingers in the tezu and clasp your hands together to dampen palms. Take about 1½ tablespoons of rice in your fingers and gently compress into the shape of a finger, about ¾ inch (1.8 cm) wide, 1½ inches (3.6 cm) long, and ¾ inch (1.8 cm) high.
- 4 Smear a bit of wasabi paste down the center of one flat side of a piece of fish. Holding the rice in one hand and the fish in the other, press the two together. The fish should completely cover the top of the rice.
- 5 Repeat with remaining rice and fish and place on a serving platter.
- 6 Mound a small amount of wasabi on the platter and serve with shoyu and pickled ginger.

- 1 Combine dashi and mushrooms; simmer over medium heat 3 minutes.
- 2 Soften the miso with a little stock and stir into the dashi until miso is dissolved. Do not boil: miso's flavor changes when boiled. Add the tofu and heat 30 seconds.
- 3 Divide the green onion, mushrooms, and tofu equally among serving bowls.
- 4 Ladle in dashi. Serve immediately, as hot as possible.

- 1 Remove any skin, blood, and dark sections from the fish.
- 2 Cut diagonally into slices 1 inch (2.5 cm) long and ¼ inch (5 mm) thick.
- 3 Arrange shredded daikon, carrot, and green onion in mounds on a serving platter.
- 4 Arrange raw fish slices on platter.
- 5 Mix wasabi to a thick paste with a little water and place on platter.
- 6 To serve, pour shoyu into individual bowls, then allow diners to add wasabi and ginger to their own bowls.
- 7 Serve with rice, if desired. Dip fish and vegetables into sauce before eating.

- 1 Preheat broiler or grill.
- 2 Thread chicken and green onions alternately onto skewers. Salt chicken and green onions.
- 3 Cook the skewered chicken and onions for 4 minutes, turning the skewers several times. Remove from heat and baste with tare (basting sauce).
- 4 Return to heat and cook 2 minutes, turning several times. Remove from heat and baste.
- 5 Return to heat and cook 2 minutes, turning once. Remove from heat and baste once more. Serve hot.

1. Preheat large pan with enough oil to fry fish.
2. Filet Mackerel.
3. Fry fish in oil, starting with skin side down first.
4. Remove fish and serve immediately with proper garnish.
