- Black Bean Soup-Great flavor, nice seasoning, nice temperature. Work on making a bit thinner, could have used a bit more garnish.
- Ceviche of Gulf Shrimp-Nice flavor of the dish,nice acidity, nice grilling of peppers, nice cuts on veggies, nice flavor on marinade, well cooked shrimp.
- Chicken with Tamarind, Ginger Sauce-Well cooked chicken, meat is moist and juicy, great flavor of sauce, nice seasoning. Work on incorporating the tamarind better, checking for seeds or pits from fruits.
- Stewed Pink Beans-Well cooked beans, great flavor, nice cuts on vegetables, well cooked veggies, nice sofrito, well cooked pork, nice consistency, nice amount of spiciness.
- Chayote with Tomatoes, Mushrooms, and Cheese-Great flavor, nice browning of toppings. Chayote needed a bit more cooking.
- Key West Conch Chowder(substituting clams for conch)-Great flavor of chowder,nice cuts on veggies, well cooked clams, nice consistency of soup.
- Hearts-Of-Palm Salad-Good flavor, nice cuts of vegetables, nice amount of citrus.
- Pan Seared Grouper-Well cooked fish, good flavor of fish and marinade, nice browning, not over on amount of browning, nice amount of garnish.
- Black Bean, Jicama, and Corn Relish-Well cooked beans, nice char on corn, nice amount of spiciness, nice amount as garnish.
- Corn Custard-lovely velvet texture, nice char on corn, well developed flavor in custard, cooked perfectly, well seasoned.
- Key Lime Pie-Didn't set up correctly.
